Project Scope
Horwath HTL was engaged to provide food and beverage (F&B) consulting for a 1,000-key hotel development, focusing on optimising both front-of-house (FOH) and back-of-house (BOH) operations for the property’s diverse dining and entertainment offerings. These included multiple dining outlets, a high-energy nightclub, and a vibrant sports bar, all integral to the guest experience and revenue generation for the project.
Our engagement began with a collaborative review of the design and operational plans alongside the project’s design team. For each venue, we assessed the layout and functionality of FOH spaces to ensure they would deliver seamless service and create engaging guest experiences. Particular attention was paid to the flow of service, seating configurations, and design features that would align with the brand vision while maximising revenue potential.
In BOH planning, we evaluated kitchen layouts, storage areas, staff pathways, and support facilities to ensure efficiency in food preparation, delivery, and inventory management. Recommendations were provided to optimise space utilisation, streamline workflows, and enhance operational efficiency across all F&B venues.
Our consulting extended to operational strategy, advising on menu concepts, pricing, and staffing models tailored to the target audience and anticipated demand. For the nightclub, emphasis was placed on integrating cutting-edge technology and event programming to create a standout destination, while the sports bar was designed to offer a dynamic atmosphere with robust audiovisual capabilities and crowd-friendly layouts.
